Recipe of the Week: Raw Caramel Pecan Slice

Difficulty: Hard

Equipment: 

  • Blender or food processor
  • 1 regular loaf tin
  • baking paper
  • knife
  • spoon
  • mixing bowl

Serves: 10

Ingredients:

Base

  • ⅔ cup almond meal
  • 1 cup rolled oats
  • 1 tbs coconut oil, melted

Caramel Pecan Layer

  • 1 cup dates, pitted
  • 2 cups pecans
  • 1 tbs coconut oil, melted
  • 3 scoops Vanilla Protein Powder

Topping:

  • Coconut chips/desiccated coconut

 

Method:

    1. Soak the dates in a bowl of hot water for 15 minutes – 1 hour.. Drain and set aside.

      2. To make the base, in a mixing bowl combine the almond meal, rolled oats and coconut oil. Add 1 tablespoon of water and stir to combine. Continue to add 1 tablespoon of water gradually until the base ingredients stick together when pinched between two fingers.

     3.  Press into the bottom of a lightly greased and lined regular sized loaf tin. Use the flat of a spoon or cup to pack the base down  firmly and smooth the top. Place in the freezer.

     4. To make the caramel layer place the dates, coconut oil, pecans and 1-2 tablespoons of water in your blender or food processor. Pulse until combined and slightly chunky.. You may need to scrape down the sides of the bowl occasionally.  If you like a smoother consistency continue to process until completely smooth.

    5. Place the caramel mixture into a mixing bowl, add the protein powder and stir to combine thoroughly. Spread over the top of the base and smooth the top. Sprinkle over coconut chips and lightly press into the caramel. Cover and place in the freezer for at least 2 hours or overnight.

    6. When set, remove from the freezer and leave at room temperature for 15 minutes before slicing with a sharp knife.

Notes & Tips:

  • Use a knife dipped in hot water to slice for best results
  • This is a high energy, high fibre treat – so stick to 1 piece at a time!
  • Perfect for that mid-afternoon slump
  • Keep chilled
  • Will keep for up to 7 days
  • Swap the dates for prunes for a delicious twist!
